One of my most favourite puréed soup recipes, This soup turns out great using either a food processor, conventional blender or a Vitamix. The food processor keeps the texture thick, which is nice and what I used for the picture shown. When using a Vitamix the soup is creamier and is made ready to serve since it comes out piping hot! It really just comes down to your preference in the end. If you don’t have a Vitamix or desire a chunkier texture, just be sure to transfer the mixture back to a large pot to warm on stove top before serving.
Note: *You may need to do two rounds of blending or processing depending on the size of your canister.
